Dutch Oven French Toast with Vanilla Icing

I discovered this recipe on a cool, late summer morning in the beautiful Canadian Rockies. This Dutch Oven French Toast with Vanilla Icing was something that started out completely different, and then morphed into something my kids ask for again and again. When I first made it I followed a recipe I found online, but then over time it changed based on what I had available in my camp kitchen. It’s easy, it’s basic, and it’s delicious!

Ingredients

  • 5 eggs
  • 1/3 cup milk
  • 1/4 cup sugar
  • 1.5 capfuls of vanilla extract
  • Sprinkle of salt
  • Sprinkle of cinnamon
  • White bread (I used Wonder bread, about 2/3 of a loaf)
  • Vanilla Icing (the kind that comes in a jar from the baking section)
  • Maple syrup

Directions

  • Mix the eggs, milk, sugar, vanilla extract, salt and cinnamon inside your Dutch oven
  • Tear off pieces of white bread and throw them into the Dutch oven, then use a spoon to gently mix them together until all of the white bread is covered in egg mix.
  • Place your Dutch oven over a fire, preferably direct heat. Let it cook for about 15 minutes, but check it around the 12 minute mark to make sure it’s not burning.
  • While the French toast is cooking, take a big spoonful or two of the vanilla icing and place it in a coffee mug. Place the coffee mug close to the fire but not over it, just to the side so it receives indirect heat. This will melt the icing.
  • Once the French toast is done to your liking, remove it from the heat. Also remove the icing from the heat.
  • Pour the icing over the French toast. If you prefer, add Maple syrup instead.
  • Serve hot in a bowl.
